GASTRONOMY

Rich, varied, and powerful. Such is the gastronomy that Oviedo shares with Asturias, although with its unique features. Visitors appreciate it as one of the city’s great attractions. Gastronomy in Oviedo is based on two pillars. Firstly, the quality and variety of the ingredients which have been bred, grown, harvested and caught in a land that has the sea and the mountains, rivers and vegetable gardens within easy reach. The second pillar is based on the quality and constant upgrading of bars and restaurants and their premises, on the cooks, and on the people who serve the public. Combine all this and you have a “recipe” for success. Try it, you will enjoy the experience.

Land of “fartones” (big eaters) and “guisanderas” (cooks)

This, we say, is a land of "fartones", which is the name of a sweet from Valencia, but is used in Asturias to refer to people who eat a lot. Our cuisine is based on good food and on substantial and abundant portions.

It is also a land of traditional cuisine but with successful examples of modern dishes. Since 1997, there has been a “Club de Guisanderas” in Asturias made up of professionals - with their own or itinerant meal houses - whose motto says it all: “the secret to the cuisine of the future lies in the recipes of the past.” In Oviedo, there is even a sculpture dedicated to the “guisanderas” in Gascona Street. It pays tribute to their culinary wisdom and the handing down of knowledge.
